Steak perfection takes time

The Dry-aging process has been around for centuries. Dry-aging went out of fashion around the 1960s as vacuum sealing became more prevalent. It’s only in the last decade or so that dry-aged has made its way back to the menus of premium steakhouse restaurants.

 

Dry-aging breaks down collagen over time to create a more tender steak, creating an entirely new flavour profile for you to enjoy. The longer a piece of beef has been dry-aged, the more flavourful and tender it will be. Experience the succulent and mouth-watering meaty flavours of our Dry-Aged Brooklyn Valley Bone-in Striploin, Scotch Fillet or Tenderloin
